Tahini Vanilla Date Carmels
(Dairy Free, Gluten Free, Soy Free, Grain Free, Peanut Free, Vegan)
Ingredients:
1 cup pitted dates softened but not soaked
1/2 cup tahini
2 tablespoons melted coconut oil
1 teaspoon vanilla extract
1/3 cup semi-sweet chocolate chips
1 teaspoon coconut oil
sea salt to taste
Directions:
After softening your dates add them to a food processor along with your tahini, melted coconut oil and vanilla extract. Process until it becomes a thick smooth paste. Line a square pan with parchement paper and press your date paste into the pan so that it is smooth and about 1/3 inch thick. Place it in the freezer for about an hour. Once chilled pull it out of the pan and cut it into equal sized 1 inch pieces. Next add your chocolate chips and coconut oil to a microwave safe bowl and heat for about 1 mintue. Stir it up until it becomes smooth. Finally drizzle the chocolate over the top of each piece of date carmel and sprinkile with seat salt. Place it in the fridge until solid. (Freeze it to make it last for weeks) Enjoy.
