Protein Fluffy Chocolate Chip Banana Bread

(Gluten Free, Peanut Free, Egg Free, Vegetarian)

Ingredients:

  • 1/3 cup all-purpose gluten free flour

  • 1 cup whole grain gluten free flour (like brown rice, quinoa, or buckwheat)

  • 1/3 cup plain protein powder

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 3/4 teaspoon sea salt

  • 1 1/2 cups mashed overripe bananas

  • 2/3 cups greek yogurt

  • 1/2 cup honey or maple syrup

  • 2 teaspoons vanilla extract

  • 1/2 cup chocolate chips

Directions:

Preheat your oven to 350 degrees. Next mix all of the above ingredients except for the chocolate chips in a mixing bowl very well. Then stir in you chocolate chips. Line a bread pan with parchment paper and add your mix to the pan. Cook in the oven for 40-42 minutes. Let cool and enjoy with some tasty butter.
