Chickpea Chocolate Chip Blondies

(Gluten Free, Soy Free, Dairy Free, Grain Free)

Ingredients:

  • 1 ½ cup canned chickpeas rinsed, drained and towel-dried

  • ⅓ cup tahini butter- or sunflower seed butter

  • ½ cup maple syrup - or any liquid sweetener you like

  • 1 tablespoon vanilla extract

  • ¼ teaspoon baking powder (gluten free)

  • ¼ teaspoon baking soda

  • ½ teaspoon sea salt

  • ⅓ cup almond flour - or other nut flour

  • ⅓ cup chocolate chips (soy free)

Directions:

Preheat the oven to 350°Fahrenheit. Line a 9-inch x 9-inch pan with parchment paper. Set aside. Next mix all of the ingredients together with the exception of the flour and the chocolate chips on low in a food processor until well combined. Next add in the flour and mix again on low until well combined. Finally add in the chocolate chips and stir in by hand. Spread the blondie batter evenly onto the prepared baking pan. Bake for 20-30 minutes or until golden and crusty on top. Let cool and enjoy.
