Indian Fried Rice
(Dairy Free, Gluten Free, Soy Free, Peanut Free Option, Egg Free, Vegan)
Ingredients:
Cornstarch Water:
1 large onion
2 tablespoons olive oil
1 small carrot chopped and diced
1/2 cup green peas
2 cloves garlic chopped
1/2 cup craisins (or use raisins if you prefer)
1 cinnamon stick
1 teaspoon ground ginger
1/4 teaspoon allspice
1/4 teaspoon red chili flakes
salt and pepper to taste
2 cups cooked basmati rice (or use white rice if you don't have basmati)
1/2 cup chopped cilantro
1/4 cup chopped almonds.
Directions:
Heat up a frying pain with your olive oil and cook onions and carrot until softened and fragrant. Next add in all your other ingredients with the exception of the cilantro and almonds. Toss and stir until mixed well. When ready to serve stir in your cilantro and almonds. Enjoy.
