Bodacious Black Bean Burgers

(Dairy Free, Gluten Free, Peanut Free, Vegan)

Ingredients:

  • 1 Tablespoon olive oil

  • 2/3 cups of chopped onions

  • 2 cups cooked and cooled black beans

  • 2 Tablespoons liquid aminos (or soy sauce if you are not sensitive to it)

  • 1/4 cup good quality balsamic vinegar

  • 1/2 teaspoon maple syrup

  • 2 cloves garlic

  • 1/2 teaspoon paprika

  • 2 teaspoons sriracha hot sauce

  • 1/2 cup walnuts

  • 1/4 cup flaxseeds

  • 2 cups precooked brown rice

  • 1 cup gluten free panko breadcrumbs (You can use any gluten free bread crumbs if you like)

  • Worcestershire sauce for brushing

Directions:

Sauté the chopped onions with olive oil until softened and fragrant. Next add the sautéed onions and all of the other ingredients except for the Worcestershire sauce to a food processor and mix until well blended but not until it is a paste. Spoon out enough of the mix to form a small ball and press it with your hand into the shape of a burger. Continue with this until you have shaped all of your mix into burgers. Heat up a non stick griddle to medium high and once hot place your burgers on the surface one by one. Now brush the tops of the burger with the Worcestershire sauce. Cook on one side for 3 minutes and then flip and cook on the other side for 3 minutes. Let cool slightly and enjoy with your favorite gluten free burger bun and toppings.
