DIY “Kind Bars”

(Dairy Free, Gluten Free, Soy Free, Peanut Free, Vegan)

Ingredients:

  • 2 cups roasted mixed nuts of your choosing

  • 1/2 cup dried fruit like crasins, cherries or strawberries

  • 1/4 cup pumpkin seeds

  • 1 tablespoons chia seeds

  • 1/2 teaspoon sea salt

  • 1/4 cup honey

  • 1 teaspoon vanilla extract

  • 3 tablespoons chocolate chips

  • 1 teaspoon coconut oil

Directions:

Preheat the oven to 325 degrees. Mix together all of the above ingredients except for the chocolate chips and coconut oil. Line a 8x8 baking pan with parchment paper and press the mixture into the pan so that it is evenly spread out and compacted. Next bake it for 30-32 minutes and let it cool. Once cooled pull it out of the pan and cut it into 12 bars. Finaly take your chcolate chips and coconut oil and microwave them together for about 30 seconds. Stir it well until smooth and drizzle over the top of each bar. Place the bars in the fridge to cool and then store then in plastic bags for a quick snack. Enjoy.
