Cream Cheese Stuffed Bell Peppers

(Gluten Free, Soy Free, Grain Free, Sugar Free, Low Carb)

Ingredients:

  • 9 mini bell peppers cut lengthwise. De-seeded and with ribs removed.

  • ¾ package sour cream and onion cheese (approx 5oz)

  • 1 tablespoon olive oil

  • 2-3 garlic cloves minced or finely diced

  • handful of cilantro / or green onions diced

  • pinch of sea salt

  • pinch black pepper optional

Directions:

Preheat the oven to 350 degrees Fahrenheit and line a baking tray with parchment paper. Place the halved mini peppers on the baking tray, drizzle with a little olive oil and cook for 10 minutes. Next fry the garlic until is is lightly browned but not burned. This happens very quick. Then combine the cream cheese, garlic, cilantro or green onions, salt and pepper, and mix well. Spoon the cream cheese mixture into the peppers and bake for another 8-10 minutes. Finally turn on the broiler on high and broil the top for about 1-2 minutes until the cheese gets slightly browned. Sprinkle with more cilantro or green onions and enjoy. Yum
