Avocado Pesto Grilled Cheese

(Gluten Free, Soy Free)

Ingredients:

  • 1 avocado smashed

  • 1/2 cup pesto

  • 8 slices of gluten free sandwich bread

  • 1/4 cup goat cheese

  • 1/2 cup mozzarella

  • 1 tablespoon butter

Directions:

Heat up a griddle to medium high. Next mix together the smashed avocado and pesto and set aside. Then mix up the goat cheese and mozzarella in a separate bowl and set aside. Take your bread and butter one side of each piece. Next assemble your sandwich first with the avocado pesto and then with the cheese mixture. Place the bread buttered side down and cook on one side until browned and until the cheese starts to melt. Then flip the sandwich and do the same thing on this side until fully cooked and ready to eat. Enjoy.
