Cocolime Chicken Red Curry: Gluten Free

Ingredients:

  • 1 tbs butter for the pan

  • 2 whole onions chopped fine

  • 4 gloves garlic pressed 

  • 1/2 cup chicken broth

  • 2 tsp salt

Sauté’ until translucent

  • add chicken breast or legs (your choice)

  • 1 tsp ground coriander

  • 1 1/2 tsp ground ginger

  • 2 tsp turmeric

  • 1 tab curry powder

  • 1/2 tsp garam masala

  • 2 tab red curry paste

  • 1/2 teas crushed cardamom seeds

  • 1 1/2 teas ground cinnamon 

  • 1/2 tea cumin

  • 1 teas dried cilantro

  • 3 teas paprika

  • 1 teas dried red pepper flakes

  • 1 1/2 whole lemons squeezed

  • 1 tab sugar

  • 1 whole can coconut milk

  • 1/2 cup plain yogurt (optional)

Directions:

Mix and stir all of the ingredients and cook on medium to low for 20 minutes so all of the flavors can soak into the chicken. In the meantime cook some rice and serve both together. Enjoy.
