Vegan Corn Fritters: Gluten Free | Soy Free | Sugar Free
These are an amazing little treat that your whole family will love! They’re crispy on the outside and soft on the inside. Dip them in a sweet chili sauce and you’ll be hooked!
Ingredients:
2 cups sweet corn (canned is fine)
2-3 cloves garlic finely chopped
1 teaspoon red pepper flakes
1 small finely chopped white or purple onion
3 tablespoons finely chopped cilantro
1-2 tablespoons nutritional yeast
1/2 of sweet red bell pepper chopped
1 cup All Purpose gluten free flour
1 teaspoon gluten free baking powder
A few splashes of dairy free milk
1/2 of lemon squeezed
A pinch or two of sea salt
A pinch of nutmeg
Oil of your choice for the pan
Sweet chili sauce
Directions:
Mix together well the sweet corn, garlic, red pepper flakes, onion, cilantro, red pepper & yeast in a bowl. Next add in your flour, baking powder and stir to mix well. Then slowly add a little milk and your lemon juice until everything sticks together nicely. Finally add in your salt and nutmeg and mix well.
Heat up a non stick pan on medium high with a little of bit of oil. Once it gets hot drop 2 tablespoons each onto the pan and flatten them out with your spoon. Cook on one side for 2-3 minutes or until browned and then flip to the other side 2-3 more minutes. Set aside on a plate and serve with sweet chili sauce. Enjoy!
