Baked Banana Protein Oatmeal: Gluten Free

Ingredients:

  • 2 cups gluten free oats

  • 2 cups boiling water

(Cover the oats with the water and set aside for 15 min)

  • 1 1/2 bananas smashed 

  • 1 flax egg (1 tab ground flaxseed with 3 tab water mixed)

  • 1/4 cup honey

  • 2 scoops plant based protein powder

  • 1/4 cup hemp seeds (optional)

  • 2 teas cinnamon

  • 1/2-1 teas sea salt

  • 2 teas vanilla extract

  • 1/2 dairy free milk

Directions:

Once the oats are fully soaked add all the other ingredients to the bowl. Mix well. Heat the oven to 350 degrees and grease a pan with coconut oil. Pour the mixture into the pan and cook for 30-35 mins. Let cool and cut into squares. Serve and top with more bananas, berries, nuts or seeds and top with dairy free milk, if you prefer. Enjoy!
