Creamy Potato Corn Chowder
Vegan - Low Fat - Nut Free - Soy Free - Gluten Free- Refined Sugar Free
Ingredients:
1 whole onion chopped
3 cloves garlic chopped
1 tab olive oil
1 1/2 - 2 teas sea salt
2 small lemons squeezed
Sauté all of the above in your Instant Pot. Next turn it off and add the following ingredients
3 small potatoes cut in cubes
1 can corn washed and drained
1 teaspoon pepper
1/4 teaspoon filling powder
1 teaspoon paprika
1 tab maple syrup
Directions:
Add all ingredients the the Instant Pot and cook for 4 minutes on high in the pressure cook setting. Next take 1/2 of the soup and blend it in a high speed blender. Mix with the other half of the soup and serve. Top with cilantro, basil or any other topping you like.
